Execution Timeline

10 SEQUENTIAL TIMED STEPS

1GRIND THE CASHEWS
8 MIN

Pulse the cashews in a grinder in short bursts until they form a fine, even powder, taking care not to over-blend into a paste that releases oil.

Tip: Pulse in short bursts and shake the jar between pulses — continuous grinding turns the cashews oily.
2MAKE THE SUGAR SYRUP
4 MIN

Combine the sugar and water in a heavy-bottomed pan and heat gently, stirring until the sugar dissolves, then let it simmer for 3 minutes until it reaches a single-string consistency.

Tip: Test by pressing a drop of syrup between two fingers and pulling apart — a single unbroken thread means it is ready.
3ADD THE CASHEW POWDER
3 MIN

Lower the heat and stir the ground cashew powder into the syrup, mixing continuously to avoid lumps, then let it cook for 5 minutes until it thickens.

4COOK UNTIL A DOUGH FORMS
5 MIN

Keep stirring the mixture over low heat until it pulls away from the sides of the pan and comes together into a soft, glossy dough.

Tip: The dough is ready when it stops sticking to the pan and holds its shape without being crumbly.
5ADD GHEE AND CARDAMOM
4 MIN

Turn off the heat, then knead the ghee and powdered cardamom into the warm dough on a greased surface until smooth and pliable.

6REST THE DOUGH
5 MIN

Cover the kneaded dough and let it rest for 10 minutes so it firms up slightly and becomes easier to roll without cracking.

7ROLL THE DOUGH THIN
6 MIN

Place the rested dough between two sheets of parchment paper and roll it out evenly to about 3-4 mm thickness.

Tip: Roll evenly from the center outward so the sheet doesn’t end up thicker in the middle than at the edges.
8APPLY THE SILVER LEAF
2 MIN

Peel back the top parchment sheet and gently press the silver leaf onto the rolled surface, smoothing it flat with the back of a spoon.

9CUT INTO DIAMONDS
4 MIN

Using a sharp knife, score the rolled sheet into diamond shapes while it is still slightly warm and pliable.

Tip: Cut while the sheet is still faintly warm — once fully cooled it becomes brittle and edges may crack.
10COOL AND SET
5 MIN

Let the cut pieces cool completely and set at room temperature for 30 minutes before separating and storing them.
